A high protein, low carb dinner, this lemon mustard chicken tastes delicious and will fill you up.


  • 1/2 lemon, juiced
  • 1 tsp dijon mustard
  • 5 ounces chicken breast
  • 1 cup green beans, trimmed
  • 1/4 red onion, chopped
  • 1/2 small sweet potato, peeled and cubed
  • 1/4 avocado


Preheat oven to 350°F. Place a piece of parchment paper on a baking sheet.

In a small bowl, whisk together lemon juice and mustard. Brush over both sides of the chicken breast, season to taste, and lay in the center of the baking sheet.

Bake 10 minutes, then remove baking sheet from oven briefly. Arrange green beans and onions to one side of the chicken, and sweet potato cubes on the other side. Bake an additional 15-20 minutes, or until chicken and vegetables are done to your liking. Remove from oven.

Place baked sweet potatoes in a bowl along with avocado, mash roughly and season to taste. Plate and top with chicken, green beans and onions. Squeeze over more lemon juice if desired.
