Using cauliflower 'rice' saves on carbs and is a delicious side to this Chinese beef and beans recipe. Serves 2. 

Ingredients

  • 2 cups cauliflower, cut into florets
  • Olive oil spray
  • 10 ounces beef top sirloin
  • 3 cloves garlic
  • 1 onion
  • 1/4 cup vegetable broth
  • 2 cups green beans, trimmed and cut into bite-sized pieces
  • 1 tbsp soy sauce
  • 1 tbsp sesame seeds
  • 1 pinch crushed red pepper flakes

Instructions

Place cauliflower in a food processor and pulse until it resembles grains of rice. Set aside.

Spray oil into a nonstick wok or large frying pan over medium heat. Add beef and cook for 3-4 minutes, until evenly browned. Remove and set aside.

Add garlic and onion to pan. Cook for 1-2 minutes, then add green beans and a splash of broth. Stir-fry for 2-3 minutes, then return beef to pan along with soy sauce and remaining broth. Stir-fry over high heat for 4-5 minutes, or until the beef has cooked through and the sauce has thickened slightly. Remove from heat and set aside to rest.

Transfer 1-2 tablespoons of the sauce to a second frying pan over medium heat. Add cauliflower and stir-fry for 5-6 minutes, until tender.

To serve, create a bed of the cauliflower ‘rice’ on two plates and top with the beef and green bean mixture. Sprinkle on sesame seeds and red pepper flakes and serve.
