A quick and easy lunch option, these vegetarian black bean soft tacos are perfect for days when you're running out of time.
- 2 corn tortillas
- 1/2 cup black beans
- 1/4 cup sweet corn kernels
- 2 tbsp salsa
- 1/4 avocado
- 1 cup romaine lettuce
- 5 cherry tomatoes
- 1/4 cup Pepper Jack cheese
Heat tortillas if desired, then lay on a flat working surface. Top each tortilla with half of the beans, corn, salsa, avocado, lettuce, tomatoes and cheese. Fold into tacos and enjoy.
TIP: Coat any exposed surfaces of the leftover avocado with lemon juice and store in an airtight container in the fridge. If a brown layer forms, simply scrape off right before the next time you need to use the avocado.
Store the leftover beans in an airtight container and refrigerate or freeze for future use.
Fresh cilantro works well in these tacos, if you have any.
